Brut de Brut Vouvray AOC Zero Dosage

Made from 100% Chenin Blanc grapes, this Brut de Brut Vouvray AOC is crafted with no dosage.The vineyards, with an average age of 30 years, are planted on clay-limestone soils. Vinification takes place in stainless steel tanks using indigenous yeasts and without the addition of sulfites. Secondary fermentation occurs in the bottle using residual sugars and selected yeasts, followed by a minimum of 36 months of aging in rock-carved cellars before release. Creamy and beautifully balanced by its minerality, it displays a deep golden-yellow color in the glass, with a fine and delicate mousse. On the nose, quince and Golden Delicious apple aromas give way to a fresh palate with notes of yellow fruit.Outstanding as an aperitif, it pairs wonderfully with oysters and fish-based dishes. Tuffo - AOC Vouvray Sec

This still Vouvray is made from 100% Chenin Blanc grapes. The fruit comes from 30–40-year-old vineyards planted on clay-limestone soils over limestone bedrock (tuffeau), formed approximately 90 million years ago. The wine displays a pale yellow color and a highly expressive nose, fresh and fruit-driven. On the palate, it stands out for its balance, with notes of fresh fruit and citrus complemented by a pleasant mineral finish. “Tuffo” pairs beautifully with shellfish, seafood, grilled or baked fish, and flavorful goat cheeses.

Clos Tenau - AOC Vouvray Sec

“Clos Tenau” stands out for its power and complexity, offering perfect balance on the palate. The 60–70-year-old vines are grown on clay-limestone soils, providing ideal conditions for expressing the unique character of the terroir. The wine is matured in ovoid tanks, with no sulfur added before the first racking. Clos Tenau displays a pale yellow color and an expressive nose of ripe pear. On the palate, it is delicious, balanced, and round on entry, with a beautiful mineral freshness on the finish. This wine pairs wonderfully with aromatic yet mildly spiced dishes, such as curries, truffle risottos, or Asian cuisine. With an aging potential of 10–15 years, “Clos Tenau” is a cuvée that promises remarkable evolution and rewarding surprises over time.

“Chapitre XVI” by Damien Pinon is an exceptional sparkling wine, the result of the passion and dedication of three generations of winegrowers. This limited-edition 2016 vintage cuvée, made from 100% Chenin Blanc grapes, is produced with no dosage and from fruit harvested at optimal ripeness to create a traditional-method sparkling wine that has rested on its lees for an impressive 60 months. On tasting, “Chapitre XVI” reveals a beautiful golden-yellow color with a fine and persistent mousse. The nose opens with notes of quince, apricot, and remarkable freshness. On the palate, it is rich and vinous, with hints of acacia blossom and honey balanced by vibrant acidity that provides excellent length and persistence. Fruits D'Automne 2018 - Vouvray AOC

Fruits d’Automne is an outstanding botrytized sweet wine crafted by Damien Pinon with passion and meticulous care. This amber-hued nectar comes from a Chenin Blanc vineyard parcel cultivated using traditional methods, with carefully tended vines and natural grass cover between the rows. The action of noble rot (Botrytis cinerea) concentrates the sugars and gives Fruits d’Automne its distinctive aromas and flavors. Vinification is a slow and patient process, featuring a long alcoholic fermentation at low temperatures with indigenous yeasts. Weekly bâtonnage is carried out to enhance the wine’s complexity and texture. In the glass, it reveals a rich golden color and a bouquet of candied fruit and apricot compote. The palate is velvety and luscious, offering an inviting roundness balanced by refreshing citrus notes. A long, enveloping finish of ripe fruit makes for a truly memorable sensory experience.
