Domaine Des Carlines

Château-Chalon by Domaine des Carlines captures the very essence of Patrick Ligeron’s passion for his beloved Jura region. Crafted strictly according to tradition from Savagnin grapes, this wine ages for seven long years in barrel under its protective layer of yeast, without topping up or racking.

Before tasting, it requires careful decanting for 2–3 hours in order to fully reveal its powerful yet refined complexity. On the nose, aromas of white fruit, citrus, and spices unfold, leading into a surprising palate that bursts with layers of fruit, citrus, nuts, hazelnuts, tobacco, dried fruit, dried herbs, and curry. The finish is long and toasty, echoing its rich aromatic bouquet.

Bottled in the traditional 620 ml “Clavelin” bottle, it represents what remains after evaporation during aging (“the angels’ share”). A wine for connoisseurs, it can easily age for 100 years, reaching its peak expression around 10 years after bottling.

The 40-year-old vines are planted at 300 meters of altitude, facing southeast, on mid-slope plots protected from the wind. The grey marl soils impart a firm, vigorous, and mineral character. The 100% Savagnin grapes undergo natural fermentation and age for 7 years in 225-liter used Burgundy oak barrels under a veil of yeast. Neither filtered nor fined.

This superb wine pairs beautifully with aged cheeses, white meats, and mushroom-based dishes. Its toasted and spicy notes make it an ideal companion for rich and structured cuisine. On the palate, it reveals its full complexity, unfolding slowly with every sip and offering new nuances each time. A unique sensory experience for wine lovers.
