Brut de Brut Vouvray AOC Zero Dosage

Made from 100% Chenin Blanc grapes, this Brut de Brut Vouvray AOC is crafted with no dosage.The vineyards, with an average age of 30 years, are planted on clay-limestone soils. Vinification takes place in stainless steel tanks using indigenous yeasts and without the addition of sulfites. Secondary fermentation occurs in the bottle using residual sugars and selected yeasts, followed by a minimum of 36 months of aging in rock-carved cellars before release. Creamy and beautifully balanced by its minerality, it displays a deep golden-yellow color in the glass, with a fine and delicate mousse. On the nose, quince and Golden Delicious apple aromas give way to a fresh palate with notes of yellow fruit.Outstanding as an aperitif, it pairs wonderfully with oysters and fish-based dishes. Also worth trying with truffle risotto, pumpkin-filled tortelli, or escargots à la bourguignonne.
