This vintage-dated classic-method sparkling wine is made exclusively from Chardonnay grapes partly fermented in French oak barrels. A fine and elegant Blanc de Blancs. In the spring following harvest, it undergoes its secondary fermentation in our cellars at a constant 14oC, where it remains for some 150 months. It is then disgorged and receives additional bottle-ageing for about one year. Appearing a rich straw yellow with golden highlights, it develops an abundant, silky mousse and a long-lingering bead of pin-point bubbles. The bouquet, generous and multi-layered, is redolent of vanilla and banana, alongside subtle hints of toasty oak and earthy mushroom. On the palate, it shows full, tangy favours, rich complexity, and a lengthy progression and finish that leaves the mouth dry and clean.
Ideal with first and second courses of fish, poultry, or veal and delicious with foie gras. It will develop further complexity during the three years after disgorging. If well-stored, it will gain even more richness on nose and palate over the following five years.
