Displaying a rich straw yellow, this 100% Savagnin is redolent of well-ripened apricot and apple, with a hint of citrus and blackpepper. In the mouth, a magisterial balance of power, concentration, and aromatic complexity. It shows significant longevity.
The vineyards lie in the Chateau Chalon appellation, but the wine bears the Côtes du Jura designation, since the wine matures not under a flor yeast film but with the ullage method, in which the barrels are topped up weekly, but with no bâtonnage. The wine matures for 18 months in used 228 li. Burgundy barrels 3-5 years old.
