This 100% Chardonnay appears a shimmering yellow with greenish highlights. The bouquet is notable for its complex of green apple, crisp citrus, and gunflint. On the palate, it shows rich and concentrated, with a lengthy progression supported by tangy acidity. It promises significant cellarability.
Ambient yeasts launch a spontaneous fermentation, and then the wine matures for 15 months in used Burgundy oak barrels 3-5 years old. The wine is given no bâtonnage, but ullage is allowed, with topping up every week. After a final blending of lots, the wine matures 3-6 months in steel.
Le Calvaire is an ideal partner with fish and seafood, veal, and marinated, grilled chicken, excellent with Asian cuisines and spicy dishes in general. It is delicious with cheeses such as Comté, Cheddar, and Parmigiano Reggiano.
