La Vouivre is a wine in which ullage utilisation and sous voile (flor yeast film) maturation are integrated and inter-relate. The cuvée consists of Savagnin (30%), Chardonnay (65%), and Chardonnay sous voile (5%). Appearing an intense straw yellow, the wine releases fragrances of ripe apple and pear, with a hint of spice, while in the mouth it is rich and complex, with a lengthy progression and finish marked by a judicious minerality. Ambient yeasts launch a spontaneous fermentation, and then 80% of the wine matures for 15 months in used French oak barrels 3-5 years old, and 10% in stainless steel. After the cuvée is assembled, the wine is given a further three months’ ageing before bottling.
La Vouivre is perfect paired with fish, poultry, veal, creamy sauces, and cheeses such as Comte, Morbier, and Mont d'Or. The adventuresome will want to try it with Asian cuisines.
