A collaborative project with Bellenda vineyard manager Diego Ros has resulted in the production of a crisp, full-flavoured sparkling wine with a pronounced, beautifully-balanced minerality. The grapes from Diego’s property are vinified with meticulous attention. They are pressed very gently, and the must macerates briefly on the skins. A Classic Method fermentation follows, and the sparkling wine then spends twelve months maturing sur lie
in its bottle, developing nuances of natural yeastiness and its varietally-classic ripe peach and apricot. The wine appears luminous and shimmering, with a slender, silky bead of dense-packed, pin-point bubbles. A generous bouquet releases emphatic notes of golden delicious apple, yellows peach, and wisteria blossom, its remarkable fragrance beautifully
highlighted by a clean-edged crispness. The palate, displaying abundant fresh-picked fruit, is firm-structured and very full. Overall, this Ribolla Gialla is an elegant, judiciously-balanced wine.
Outstanding as an aperitif wine, but its structure and full body make it a terrific partner to first courses and to fish and vegetarian dishes and antipasti.
