Vaunting a magnificent salmon-pink hue from its maceration on the skins, this "Rosé de Saignée" is grown in vineyards in Vrigny and Gueux, both premier Crus. Following malolactic, it is given a dosage of 4g/l, then ages a minimum of 4 years in the cellar.
After a lovely bead of pin-point bubbles, the nose offers clean-edged notes of rose petals, wild red berryfruit, and fresh-baked bread, while fruit and blossom infuse its full-flavored palate, tangy to near-briny. The finish is redolent of blossoms and wild berry, lifted by a delicious yeastiness.    
Ageing potential: Already perfectly enjoyable, it will be at its best in 2-3 years, but will further evolve over the next ten.
Serving suggestions: Outstanding as an aperitif wine but ideal with raw fish, shellfish, sushi, as well as prosciutto crudo of Parma and of San Daniele, cubed mortadella, Parmigiano Reggiano, hearty pasta dishes (alla Norma, with garlic and chilli peppers, or amatriciana) and fries, roasted lighter meats.
Growing area: Vrigny and Gueux, both on the Montagne de Reims, in the Champagne AOC.
