Metodo Rurale IGT Colli Trevigiani is a semi-sparkling made with ancestral method searching through our sensory memory of how wines smell and taste.
First, we put no SO2 into the must, then we allowed this wine to ferment on the skins, in non
temperature-controlled wooden vats, all the while monitoring it carefully so that we could
understand what exactly was happening to the must as it slowly became wine.
The second fermentation took place in the bottle; in the bottom of the bottle there are the spent yeast cells that you will appreciate the authentic “rural method. Its spontanous fermentation in the bottle allows to have a very unique wine: some bottles will have a more compact deposit, some more bubbles, others fewer.
Perfect as aperitif with with bread, salami and cheese. Perfect with saffran risotto and mushrooms. Try it with delicate spicy food. Interesting with vegetables cous cous and beans.
